Sweet potato rösti

When I spent some time in Switzerland one of my favorite dishes was rösti! Potato are the main ingredient and you can really add any herbs and spices to add your touch to it. I prefer to use sweet potato as they are packed with nutrients and flavour they are rich in vitamin C and niacin (vitamin B3), and a great source of vitamin B6. They are also have a low glycemic index, which results in a less immediate impact on blood glucose levels. This can help individuals with diabetes control their blood sugar. It’s a great recipe when you have friends come over for Brunch or as a side dish!

Sweet potato rösti
Ingredients:
Half a large sweet potato
Clove of garlic
1 egg
2 Tbsp of flour
Fresh chopped herbs
1 tsp cumin
1 tsp oregano or chili flakes
Avocado
Lemon juice

Olive oil for frying.

Method:
Grate sweet potato drain off any excess juices
Place in a bowl add dry ingredients
Add egg
And mix mix
Shape into Pattie’s

Fry up until crispy golden
Add some fresh avocado herbs and whatever takes your fancy.

It’s a great meal or as a side.
