Courgette loaf
When it comes to afternoon tea! I love a simple courgette loaf. Always a crowd pleaser! Nutritionally speaking, its packed with soluble fibre, added protein from the greek yoghurt and eggs. So enjoy this simple afternoon delight!
Nutritional tip: The courgette's thin dark skin is high in soluble fibre, which slows digestion and stabilises blood sugar levels – potentially getting rid of those pesky mid-afternoon sweet cravings. Soluble fibre can also prevent constipation and help with those unpleasant IBS symptoms so many of us endure.
Courgette loaf.
220g all purpose flour (1 and 3/4 cup)
1 tsp baking powder
1/2 tsp bi carb soda (baking soda)
Pinch of salt
1/2 cup coconut oil (melted)
1/2 cup dark brown sugar
1/2 cup cane sugar
2 eggs
1/4 cup of greek yoghurt
2 tsp vanilla
1 and 1/2 cups of grated courgette
Optional:
1/4 tsp of nutmeg and or cinnamon.
Method:
1. Mix all the dry ingredients accept the sugar together until combined and set aside.
2. In another bowl whisk the oil, sugar, eggs, and greek yoghurt until combined.
3. Place the wet ingredients with the dry ingredients and fold in the grated courgette don’t over mix.
4. Spread the batter evenly in a prepared loaf tin. Bake in a 175 degree between 50 - and 60mins. Loaf is ready when a skewer comes out clean.
5. Allow the loaf to cool and serve with some greek yoghurt and chia jam like me :) or just as is, it's perfect.
This will store for a week in the fridge and can also be frozen!
Top tip… do a double batch so when guests turn up - you have something to enjoy together!
