The perfect pancakes!
So what's the key to the perfect pancake? Sparkling water, of course. You can make sure that your pancakes are the highlight of the meal by adding carbonated water. Making these pancakes is simple and quick. Advice: I frequently prepare my batter ahead of time and put it in the refrigerator in a jar the night before. This recipe can easily be halved. Enjoy!
Serving 4 persons.
2 cup flour
3 tablespoon sugar
1 1/4 teaspoon baking powder
1/2 teaspoon salt
1 3/4 cup milk (I use plant base milk, personal preference)
2 eggs
3 tablespoon melted butter
1 teaspoon vanilla
1/2 cup sparkling water
(1 tablespoon of butter for pan)
Method:
Whisk together all your dry ingredients and set aside. In a separate bowl, whisk together wet ingredients until combined, then pour into dry ingredients and mix.
Using a little butter on some paper towel rub non-stick pan. (Repeat between pancakes).
When pan is hot, pour batter in batches or one large pancake depending on your chosen size. Cook until bubbles form on the surface of the batter and underside is golden brown, around 1-2 minutes. Flip and repeat on the other side.
Serve with some berries, mango, coconut yoghurt and maple syrup.
